
I just love my breakfast. It’s the most important meal of the day, and these sourdough pancakes πππ have got to be my favourite at the moment.
Super fluffy, moist and soft, and there’s not a hint of sourness to it. (could be because it was drowning in maple syrup) . Did I mention it’s egg & dairy free π±
Yep, you can still achieve soft and heavenly fluffy pancakes without milk or egg!
The natural yeast from the sourdough starter, helps the pancake rise, making them soft and fluffy.
And with the natural, fermentation goodness, of sourdough, you are giving your gut a good dose of friendly lactobacillus digestive bacteria (these are the ones you want), one pancake at a time πͺ.
Great Way To Save Your Sourdough Starter

I hated wasting my sourdough starter. It’s so sad to see it go to waste everytime I need to fed my sourdough starter.
So I’m always on the look out, for ways to use them up, rather than seeing them go to waste.
That’s when I discovered, I can use them in my pancake batter!
Simply add a cup of starter to my pancake batter mix and I’ve got myself some golden, fluffy, moist, morsels of goodness, made from simple ingredients I already have.
Best thing is, I can freeze the pre made pancakes too! So I will always have a batch of ready made pancakes on had for those lazy Sundays.
Shhh the sourdough pancake batter is resting π€«
You can use the pancake batter straight away, but letting it rest overnight will let the sourdough starter work its magic.
The longer you let it rest the more air it will create in your batter, resulting in a airy, light & fluffy pancake π.
No Sourdough Starter, No Problems
If you don’t have a sourdough starter, you can try and get some from your local bakery that makes sourdough bread, or you can try your hands & patience at making some.
It’s very simple to make, and once you’ve got it, it won’t be just pancakes you’ll be making πππ.

Sourdough Pancakes
Ingredients
- 3 cups soy milk
- 3 tbsp apple cider vinegar
- 1 cup sourdough starter
- 2 cups plain flour sifted
- 2 tsp baking soda
- 2 tbsp ground flaxseed
- 1 tsp ground cinnamon
- 6 tbsp water
- 1/8 cup grapeseed oil
- 1/3 cup caster sugar
Instructions

First prepare the buttermilk by mixing the soy milk and the apple cider vinegar together and let it set for 5 min.

In a mixer bowl, add the sourdough starter and butter milk and mix to loosen the starter.

Then add the remainder of ingredients and mix on medium speed till everything has been incorporated.

Then put mixture in the fridge to rest overnight.

Next day, using 1/4 cup scoop mixture and put pancake batter onto hot pan.

When the edge of the batter is starting to look cooked and there are lots of bubbles on top, flip the pancake over and cook the other side.
As you have cooked one side of the pancake, it won’t take long for the other side to be done.
You will also notice the pancake starting to rise nice and fluffy πππ

Cooking should only take a couple of minutes each side.
Remove from heat and serve immediately with choice of topping
Recipe Notes
I choose soy milk as it gives me a thicker, fluffier texture. You can use whatever plant based milk you like. You can even just use water!

This batter will make roughly 10 x 15cm size pancakes.
