Mmmmm, after a busy day home schooling whilst trying to work, there’s nothing more satisfying than a big bowl of pumpkin soup with some delicious sourdough bread, of course.
I always make a big pot of my spicy golden pumpkin soup for the days I know I’m going to be busy.
It’s one of those soul food, that’s easy to make, packs a punch with flavour, and something I can just leave to simmer.
And if I’m lucky, there’s enough left over for lunch the next day 🙌🏻🙌🏻🙌🏻.
Delicious Spicy Golden Soup
This soup is not only full of beautiful sweet roasted pumpkin, but also anti inflammatory spices, such as ginger, turmeric, cinnamon, peppercorn, chilli, garlic and cumin.
It’s not on the recipe, but to make this soup even better, l added a cup of red lentils to give this delicious soup some substance, as well as added fibre 💪🏻.
Tasty, easy, immune boosting, and high in fibre.
