I seriously have been baking these vegan chocolate chip cookies like crazy for the past few weeks, and I, or shall I say, we just can’t seem to get enough of them ๐Ÿ˜‹.

They’re crispy just on the edges, but gooey and soft in the centre, with a really deep chocolatey, caramel flavour ๐Ÿคค๐Ÿคค๐Ÿคค.

What About Milk & Egg?

Being soft and chewy, crispy and gooey, you might think how can this be possible without milk and egg?

Well, nope, no milk or egg needed here.

A little bit of milk added, creates a softer cookie dough, and as a result a softer crumb. 

Eggs are a binding agent, holding ingredients together, and you may have seen a lot of recipes calling for it, and even the store bought cookies have eggs in their ingredients list. 

However, you donโ€™t need these ingredients. The balance of the butter, sugar, flour , baking soda, and temperature ratio, will do all the above and give you perfect results everytime.

Iโ€™ve baked a lot of cookies and eaten a lot of cookies in my life, and I really canโ€™t tell the difference.

Now you know how much I love my coffee, so of course I had to add it to my chocolate chip cookies.

It really enhances that decadent chocolate, caramel flavour, and if you can add it in brownies and cakes, I don’t see why you can’t add it to cookies.

Vegan Chocolate Chip Cookies

Ingredients

  • 200 grams caster sugar
  • 200 grams brown sugar
  • 200 grams vegan butter I use Nutterlex
  • 1 tsp vanilla extract
  • 1 shot espresso coffee
  • 1 tsp sea salt flakes
  • 3 cups plain flour sifted
  • 2 tsp baking powder sifted
  • 1 tsp baking soda sifted
  • 120 ml soy milk or other plant milk
  • 400 grams vegan chocolate chips

Instructions

  1. Mix both sugar and butter in a medium size bowl, until smooth.

  2. Then add vanilla extract, espresso coffee, and salt to the mixture, and continue mixing.

    * If you donโ€™t have espresso coffee on hand, 1 tsp of instant coffee mixed with 1 tbsp of hot water will work just as well.

  3. Then add sifted flour, baking powder, soda, and choice of milk, and continue to mix till incorporated.

  4. Finally add the chocolate chip and mix till chocolate chip is evenly distributed.

    * Recipe calls for chocolate chip buttons, but chopped up blocks of chocolate works just as well ๐Ÿ‘Œ๐Ÿป.

  5. Cookie dough can be baked immediately in a preheated oven of 180ยฐC Or 350ยฐF, for 10-15 min.

    But for a deeper flavour, cover cookie dough and let rest in the fridge overnight.

  6. The next day or when you are ready to bake, preheat oven to 180ยฐC or 350ยฐF

  7. Remove cookie dough from fridge, and let it come slightly to room temperature, roughly 10-15 min.

  8. Using a cookie scooper, scoop cookie dough onto a lined baking tray and bake cookies for 10-15 min or until golden brown.

    * No cookie scoop, no worries. Just use your hands and roll them into a ball ๐Ÿ‘Œ๐Ÿป

  9. When ready, remove cookies from oven and let cool slightly before transferring to cooling rack to cool completely.

  10. Cookies can be enjoyed once cooled, and stored for up to three weeks in air tight containers, thatโ€™s if thereโ€™s any left ๐Ÿ˜‚

Recipe Notes

Recipe calls for chocolate chip buttons, but chopped up blocks of chocolate works just as well ๐Ÿ‘Œ๐Ÿป.

Baking your cookie dough at a lower temperature, or even purposely under cooking them slightly, will give you a softer, fudgier texture, and for a crisper, dry, cookie, up the temp and bake for a shorter time.

And finally, cookie dough can be kept frozen for next time. Simply defrost and bake as instructed.

As cookies will be soft when they first come out of the oven, itโ€™s best to let your cookiesย cool slightly, before transferring them to cooling rack to cool completely, to reduce breakage.
