
Perfect, Light, And Crispy Egg Free Meringue
Who doesn’t love meringue nest?
With their, light and crispy shell, the delicately sweet, and soft texture inside.
Mmmmm, my mouth is watering already.

Looking at this delightful meringue nest treat, you may be fooled into thinking this was actually made with egg whites, but Nope!
These scrumptious meringue nests are completely gluten and egg free 🙌.
How? You Ask?
Well, it’s a thing called aquafaba, which is the thick liquid you find in canned chickpeas (cooked garbanzo beans) or the liquid residue you get from cooked chick peas or most other beans in fact.
Aquafaba, from chickpeas is more commonly used as a egg white substitute as it’s, light in colour as well as lighter in taste.
You can do all sorts with the wonder of aqaufaba, from marshmallows, macaroons, mousse and meringues!

But we’re Making Meringue
The technique is pretty much the same as making normal meringue, except you substitute the egg white with aquafaba.
And don’t they whip perfectly, without the taste of chickpeas.
Let’s Bake
To make these delightful meringue nest, you will need
- Roughly 200 ml of aquafaba (You can get this from 1 can of cooked chickpeas)
- 200 grams Caster sugar
- 2 tsp Corn flour
- 1/2 tsp White vinegar
Place aquafaba, vinegar and cornflour in a clean mixing bowl and on high speed commence mixing with a whisk till white and glossy.
Once you start to see it thickening, start pouring the caster sugar, roughly 1/8 cup at a time until all the sugars have been incorporated and stiff peaks form. Roughly 10 min.
Once done, place your meringue mixture into a piping bag and pipe the meringue in a circular motion, creating a nest.
Bake in a preheated oven of 100c or 210f for about 1 hr or until merigue is crisp on the outside.
Once cooked, let the meringue cool in the oven completely before using.
Decorate with your choice of topping.
I put some vegan ice cream, raspberries, blackberries, pomegranate with a sprinkle of icing sugar.
Yum 😋

Once baked, they actually store very well.
Meringue nest can be stored in a air tight containers for up to 3 months.

So these fancy looking desserts can be whipped up in no time! Great for any dinner party or dessert for 1!

Egg Free Meringue Nest

Ingredients
Egg Free Meringue
- 200 ml aquafaba roughly 1 tin
- 200 grams caster sugar
- 2 tsp corn flour
- 1/2 tsp white vinegar
Garnish
- 1 cup strawberries sliced
- 1 cup raspberries
- 1 cup blackberries
- 1 cup pomegranate
- 2 cups coconut cream or ice cream
- 1 tbsp icing sugar
Instructions

Pre heat oven to 100C or 210F

Place aquafaba, vinegar and cornflour in a clean mixing bowl and on high speed commence mixing with a whisk till white and glossy.

Once you start to see it thickening, start pouring the caster sugar, roughly 1/8 cup at a time until all the sugars have been incorporated and stiff peaks form.
Roughly 10 min.

Once stiff peaks have formed, place your meringue mixture into a piping bag.

Line a tray with baking paper and pipe the meringue mixture in a circular motion, creating a shape of a nest.

Place tray in oven and bake for about 1 hr or until crisp.

Once cooked, let the meringue nest cool in the oven completely before using.
To Assemble

Remove meringue nest from tray.

Place choice of coconut cream or ice cream on top of the meringue nest.

Then add the remainder of the topping.

Using a sieve, sprinkle a little icing sugar on top.

Serve immediately.
Recipe Notes
For best meringue results, mixing bowl should be clean and free from oil or grease residue.

Be sure to pick a salt free tin of chickpeas.

If you’re not using the meringue nest, store them immediately in a air tight container or they will become soft and sticky.
