These Easy Sourdough Garlic Pizza Bread Are Our New Garlic Bread Staple.

I hate wasting food, so I’m always looking for ways to reduce, reuse or recycle the food, especially when it comes to my precious sourdough starter!

I often use the discarded sourdough starter and make up a batch of pizza dough & freeze it for when I want to use them. 

Simply thaw, roughly 30 min, pending weather and you are ready to top.

Drizzle a bit of olive oil, a load of fresh minced garlic & herbs, sprinkle of sea salt flakes, bake @ 290c or 554f till edges are brown & bobs your uncle πŸ˜‹.

By using the natural fermentation of the starter, no yeast is required πŸ‘πŸ».

Sourdough is also easier to digest and very nutritious compared to some of your normal bread.

So Easy To Make

To make, you will need

100g of sourdough starter

600g of sifted 00 flour 

2 tbsp of olive oil 

400 mil of water

2 tsp of sea salt flakes 

Instructions

In a mixer bowl, using a whisk, loosening (mix) sourdough starter with 200mil of water.

Then add the sifted flour, olive oil, remainder 200mil of water and mix on medium speed with the dough hook attachment until dough forms.

Slowly increase the speed until dough no longer stick to the bowl. Roughly 5 min.

Then let it rest in the mixer bowl for 30 min.

In a small bowl, mix 50g of water with 1 tsp of sea salt flakes till salt have dissolved. 

Pour salt solution into rested dough and mix on low, till solution is completely incorporated. 

Turn speed up to high and mix dough for another 5 min or until dough is soft and elastically in texture.

Lightly grease a large bowl with some olive oil and place dough in bowl. Cover and let dough rest overnight in the refrigerator.

Next day, cut dough into 4, shape into balls and let it rest at room temperature for an 1hr or so before shaping to use.

Each piece makes roughly 20cm base. Use immediately or put shaped pizza base in the freezer for later use πŸ‘ŒπŸ»

If you don’t have sourdough starter, a packet of the 7g instant yeast will work too.

Ingredients

  • 1/2 tsp sea salt flakes
  • 1 tbsp extra virgin olive oil

  9. Next day, tip dough on a lightly floured surface and cut dough into 4.

  10. Shape into balls and let it rest on a lightly greased tray at room temperature for an 1hr or so before shaping to use.

  11. To shape, simply press your fingers into the dough from the centre outwards and shape into a flat disc.

    Rotating the dough to get an even circle, leaving the edges a little thicker for crust.

  12. Keep pressing the dough until desired thickness.

    5 mill, will give you a nice thick crust. 

    If you prefer a thin crust, use a rolling pin to roll a thinner base.

Garlic Topping

  1. Pre heat oven to 290c or 554f.

  2. To make garlic sourdough pizza, simple drizzle oil on the rested/thawed pizza base.

  3. Then sprinkle fresh minced garlic and sea salt on top.

  4. Drizzle some more oil on top, and then place in hot oven and bake for 5 – 10 min, or until crust have puffed up and is golden brown.

To help with even cooking and that lovely air pockets in the dough, use a pizza stone to cook the dough.

I love garlic, you are welcome to use less if 5 is too intense for you.

This base is not just for garlic bread, you can also use it for pizza or as Turkish bread. Simply sprinkle some zaΓ‘tar herb mix over, drizzle with some oil and you’ve got your’self a fluffy delicious sourdough Turkish bread πŸ˜‹
