Cold Soba Noodle with Dipping Sauce

I Just loooove soba noodles.

They’re gluten, fat & cholesterol free. A great source of prebiotics (fuel for your probiotics), lean protein, and Soba Noodles taste delicious eaten hot or cold.

With the weather getting warmer, you can enjoy Soba Noodles in cold soup, salads or just mixed in with a little dipping sauce.

These deliciously healthy cold Soba Noodles are packed with flavour, and takes less than 10 min to prepare, and the best thing is it’s accidentally vegan 😱

To Make

There’s lots of delicious dipping sauces out there but for my easy version of the cold soba noodle.

Cook 2 portions of soba noodles in a pot of boiling water for 5 mins or until noodles is just soft.

Once cooked, drain the water and quickly run cold water through the hot noodles.

Place noodle in bowl till ready to serve.

To Make the Sauce

  • 2 tbsp rice vinegar 
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1 tbsp water
  • 1 tsp sesame oil
  • 1 crushed garlic
  • 2-3 slice of chilli (depending on the heat you can handle)

Mix all ingredients in a heat proof bowl.

Heat in the microwave for 1 min and add desired qty to your cooked soba noodles👌

You can also add toasted nuts, seed or fried shallots on top for added flavour and texture 😋

I added some thinly sliced stir fried shiitake mushrooms, asparagus & carrots for added flavour and veggie goodness 💪.

Cold Soba Noodle with Dipping Sauce

Ingredients

  • 2 portion Soba Noodles
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tbsp water
  • 1 tsp sesame oil
  • 1 garlic crushed
  • 2 slice red chilli

Instructions

  1. In a medium size pot, boil some water for your soba noodles

  2. Once water boils, gently place noodles in hot water to cook.

    When cooking noodles in boiling water, the starch in the noodles will create a lot of bubbles and may cause water to overflow if unsupervised.

  3. Once cooked, drain the water and quickly run cold water through the hot noodles.

  4. Drain again and place noodles in bowl till ready to serve.

  5. To make the sauce, in a small heat proof bowl, mix all the remainder of ingredients.

  6. Heat in the microwave for 1 min.

  7. Pour desired qty to taste over prepared soba noodles 👌

Recipe Notes

I found stirring the noodles continuously helps with the bubbling.

 

Cook time is roughly 10 min, I prepare the dipping sauce while I wait for my noodles to cook 😉
