Nothing I love more than delicious eats that requires no cooking, like these no bake mint slice!

These mint slice are so easy to make. Just blitz, spread and pop them in the fridge for 30 min to set! 

Being such a quick and easy recipe, this no bake mint slice is always on my go to list, for when I want a satisfying, decadent, and vegan sweet treat, without having to make the trip down the street.

Refreshing, Sweet & Everything Nice

These mint slice, are soft, moist, sweet but not too sweet and packs a punch of mint flavour.

So good, I could easily eat a whole tray of these 😋.

Have you tried cooking with essential oils?

Instead of peppermint essence, I used peppermint essential oil for that deep strong peppermint flavour.

So potent I can feel my mouth watering just by the smell of it. 

And being 100% pure essential oil, you will only need a few drops to get that peppermint flavour shot.

So if someone thinks your cooking is bad, don’t worry, they probably have a blocked nose…lol

So not only are these no bake mint slice, flavourful, but smell so good too.

And that’s a bonus too, because the smell of peppermint can help with alertness, retention and cognitive function due to its stimulant qualities.

One drop of 100% essential oil is equivalent to 1 teaspoon of essence so in small doses, 100% essential oil is safe to consume.

No Bake Mint Slice

Ingredients

Base

  • 150 grams medjool dates pitted & chopped
  • 60 mil water
  • 300 grams plain vegan biscuits I used McVities original digestives
  • 2 tbsp cocoa powder
  • 80 mil coconut oil liquid
  • 1/4 cup hazelnuts roasted

Mint

  • 2 cups icing sugar 360g
  • 3 drops peppermint essential oil or 2 tsp of peppermint essences
  • 5-6 tbs soy milk

Chocolate coating

  • 120 mil coconut oil liquid
  • 1/4 cups maple syrup
  • 1/4 cups cocoa powder sifted
  • 1/2 tsp sea salt flakes

Instructions

  1. Place chopped dates and water in a small saucepan and bring to the boil on medium heat.

    Stirring the date mixture occasionally till date mixture is smooth. 

  2. Set date mixture aside to cool completely.

  3. In a food processor, add the digestives, cocoa powder, roasted hazelnuts and pulse till combined.

  4. Then add cooled, date mixture and coconut oil and pulse till combined and desired texture is reached. 

    I prefer a fine crumb texture but you can have a chunkier crunchier texture.

  5. Pour biscuit mixture into a lined baking tray and press mixture firmly and evenly into tray.

    I used a 25 x 20 cm brownie tray.

  6. Put base in fridge to chill, while you prepare the mint icing.

  7. In a medium size bowl, add the icing sugar and 2 drops of peppermint essential oil.

    If you don’t have essential oil, you can use 2 tsp of peppermint essence.

  8. Then add the soy milk a tbsp at a time until you reach a thick consistency. 

    Icing mixture should be firm & thick to stir but, runny when you lift the spoon and let the icing fall.

  9. Add more icing if too runny and milk if too thick

  10. Pour icing mixture on to base mixture, making sure to spread icing mixture evenly, covering the whole base.

  11. Then return tray to fridge to set for 30 min.

  12. For the chocolate coating, mix all chocolate coating ingredients into a bowl till incorporated.

  13. Then pour chocolate mixture on top of cooled mint icing, making sure all is covered evenly.

  14. Let chocolate coating set for 10 min, then sprinkle some sea salt flakes evenly over chocolate coating.
  15. Then return tray to fridge to set for 1 – 2 hrs before slicing.

Recipe Notes

You can add more or less peppermint oil or essence to taste.

Put tray in fridge to set for 30 min per stage to make it easier to pour the next layer.

Mint Slice can be stored in a airtight container in the fridge for 1 month, that’s if you haven’t eaten them all… lol
