We all know how healthy kale & goji berries are, and not many people know how else to eat these super foods beside in a smoothie🤷‍♀️ .

Well I’ve got a few ideas and I’m going to tell you how to make a delicious salad with these two super food, that is healthy, tasty and will leave you feeling full and nourished.

How Else Do You Eat Kale?

I must admit I have a lovely green kale smoothie everyday, but that’s not all I stock up on my kale for.

Kale is one of those wonderful ingredients you can eat, fresh or cooked and each will give you a completely different taste and texture.

Fresh kale, gives a firmer texture, very strong, bitter and earthy in flavour, and being raw, packs a potent punch with all it’s vitamins and mineral goodness.

Cooked, gives it a softer texture yet still holds its body without wilting, unlike chard or spinach, and the earthy flavour is a lot more subtle.

Kale is also low in calories, have more iron than beef, calcium than milk and 10x more vitamin C than the all mighty spinach 🙌.

Steamed, sauteed, blitz in sauce or dips, its never been easier to get your daily iron, calcium and vitamins and minerals intake in the one go!

And The Goji Berries?

Like its buddy kale, a handful of goji berries and you’ve got yourself a Vitamin, B1, B2, B3, B6, C & E loaded, anti ageing, antioxidant, energy boosting super food.

Goji berries, dried, have a really strong almost slightly bitter/medicine like flavour to it. It’s highly used in Chinese cooking and medicine for its medicinal benefits. 

Hydrated and it’s very plump and has a lovely sweetness to it, like raisins, current and cranberries.

Completely different taste to when it’s dried.

So a wonderful super food ingredient to add to your granola, muesli bars, biscuits, hot oats, and tea! I say!

My Favourite, In Salads 😋

This kale, goji berries, couscous healthy salad, like all my recipes is so easy to make and the dressing can be stored in the fridge for up to a month.

Great for packed lunches, picnics and a salad that is sure to impress at any party.

So lets get started!

Sweet & Tangy Balsamic Dressing

  • 60 ml of Maple Syrup or Pomegranate Molasses
  • 30 ml Balsamic Vinegar
  • 1 tbsp Extra Virgin Olive Oil

Put all dressing ingredients in a clean jar and give it a good shake!

Kale, Goji Berries, Couscous Salad

  • 1 cup of Couscous
  • 1 1/2 cups of Boiling Water
  • 300 grams of Kale (roughly chopped & blanched)
  • 50 grams of Mint (roughly chopped)
  • 1/3 cup of Goji Berries
  • 1/2 cup of Slivered Almonds (toasted)
  • A handful of pansy for garnish

Pour couscous and hot water into a large bowl. Cover bowl with lid or cling wrap and let couscous cook for 30 min.

When water have all been absorbed and couscous is soft , throw in all the other ingredients.

Pour the dressing to taste and mix.

Ingredients

Sweet & Tangy Balsamic Dressing

  • 60 mil maple syrup
  • 30 mil balsamic vinegar
  • 1 tbsp extra virgin olive oil

Kale Goji Berries Cous Cous Salad

  • 1 cup couscous
  • 1 1/2 cup hot water
  • 300 grams kale rough chopped
  • 50 grams mint roughly chopped
  • 1/3 cup goji berries
  • 1/2 cup slivered almonds toasted

Instructions

  1. Put all dressing ingredients in a clean jar and give it a good shake!

Kale Goji Berries Cous Cous Salad

  1. Pour couscous and hot water into a large bowl. 

  2. Cover bowl with lid or cling wrap and let couscous cook for 30 min.

  3. In a small bowl, place chopped kale and pour enough hot water to cover the kale

  4. Let kale cook for about 5 min , strain, and quickly run hot kale under cold water to stop it from cooking further.

  5. In the couscous bowl.

    When water have all been absorbed and couscous is soft , throw in all the other ingredients, including kale.

  6. Pour the desired amount of dressing to taste and mix.

  7. Garnish with some fresh pansy or mint and season with some salt and pepper to taste
