Healthy Gooey Choc Mint Slice
Ingredients
- 1 1/2 cup medjool dates
- 1/2 cup raw almonds
- 1/2 cup pumpkin seeds
- 1/2 cup rolled oats
- 1/2 cup shredded coconuts
- 1 1/2 tbs cocoa powder
- 1 tsp vanilla extract
- 2 tsp peppermint extract
- 2 tbs coconut oil
- 1/4 cup maple syrup
Instructions

Put all ingredients into a food processor and blitz till combined and smooth

Pour mixture into a lined brownie pan and spread mixture evenly.

Let it set in the fridge for about 1 hr before cutting into even slices.

Sprinkle a bit of cocoa powder on top and you are done.
Recipe Notes
Mixture can also be used to make protein balls. Simply roll mixture into a ball with the palm of your hands and dust with cocoa powder.
You can pulse the mixture instead of blitz for a crunchier texture.
Store in an air tight container
