Vegan Plum and Almond Crumble Slice

Plum and almond crumble Slice? Yes Please! Soft, chewy, with a lovely buttery biscuit base, and absolutely delicious is how I would describe these slice.

Ingredients

Buscuit Base

  • 200 grams vegan butter
  • 220 grams caster sugar
  • 300 grams almond meal
  • 150 grams plain flour

Plum Filling

  • 25 grams plain flour
  • 2 tbs ground flaxseed
  • 6 tbs water
  • 1 tsp grounded cinnamon
  • 1 tsp baking powder

Topping

  • 300 grams plums Roughly 6 medium size plums, chopped
  • 50 grams almond flakes
  • 1 tbsp coconut sugar
  • 1/2 tsp grounded nutmeg
  • 1/2 tsp grounded cinnamon

Instructions

Biscuit Base

  1. Preheat oven to 180°C or 355°F

  2. In a food processor, pulse butter, caster sugar, and almond meal together till mixture resemble bread crumbs.

  3. Spoon half of the mixture into a medium size mixing bowl and set aside to make filling.

  4. Add the 150g of plain flour into the food processor with the remaining mixture and mix on high till a dough forms or till ingredients are combined.

  5. Place dough mixture into a lined brownie tray, and gently spread and press the dough mixture evenly into the tray.

    I used a 20cm x 30cm brownie tray.

  6. Place tray into the oven and bake for 15-20 mins or until golden brown.

  7. Once ready remove pastry from oven and leave to cool in tray for 10 min.

Plum Filling

  1. Prepare flax egg by combining grounded flaxseed, and water together. Then let it thicken, roughly 5 min.

  2. Place remaining butter, sugar and almond meal filling back into the food processor, and add the flax egg mixture, cinnamon, baking powder, 25g of plain flour and mix into a smooth batter.

  3. Remove batter and spread over cooled biscuit base.

  4. Place the chopped plums ontop of the batter, and gently press the plums into the batter.

  5. Sprinkle 1 tbsp of coconut sugar, 1/2 tsp of cinnamon, 1/2 tsp of nutmeg and almond flakes over the batter.

  6. Cover the tray in foil and bake for 20 min, then remove cover and bake for another 20 min or until batter comes out clean with a prick test.

  7. Remove crumble slice from oven and leave to cool in tray before slicing.

  8. Sprinkle with a bit of icing sugar if desired 👌🏻
