Healthy Gooey Choc Mint Slice

The sweet sticky dates, mixed with the bitter cocoa makes a decadent treat with a minty freshness. So tasty you won't believe it's actually healthy

Ingredients

  • 1 1/2 cup medjool dates
  • 1/2 cup raw almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup rolled oats
  • 1/2 cup shredded coconuts
  • 1 1/2 tbs cocoa powder
  • 1 tsp vanilla extract
  • 2 tsp peppermint extract
  • 2 tbs coconut oil
  • 1/4 cup maple syrup

Instructions

  1. Put all ingredients into a food processor and blitz till combined and smooth

  2. Pour mixture into a lined brownie pan and spread mixture evenly.

  3. Let it set in the fridge for about 1 hr before cutting into even slices.
  4. Sprinkle a bit of cocoa powder on top and you are done.

Recipe Notes

Mixture can also be used to make protein balls. Simply roll mixture into a ball with the palm of your hands and dust with cocoa powder.

You can pulse the mixture instead of blitz for a crunchier texture.

Store in an air tight container
