Healthy Immune boosting Ginger Apricot protein balls
Put dates and apricot into food processor and blitz till course texture
Then add remainder ingredients and blitz till combined and smooth
Scoop a tbsp of mixture and roll mixture into a ball between the palms of your hands
Protein balls can be eaten as is or you can drop them in a bowl of mixed desiccated coconut and sesame seed coating
You can make mixture a bit thicker (pulse instead of blitz) if you prefer a crunchier texture.
Use wet hands to easily roll the balls without them sticking to you
This mixture can be made into slices. Simply pour mixture into a lined brownie pan, let it set in the fridge before cutting into evenly slices.
Store protein balls in a air tight container
