Fudgy Gooey Vegan Beetroot Brownies

Delectable, fudgy, gooey and kind of healthy vegan beetroot brownies to kick things off

Ingredients

  • 4 Medium Sized Beetroot Peeled and grated
  • 3 tbsp Ground Flaxseed
  • 9 tbsp Water
  • 1 tsp Instant coffee
  • 1 tbsp Hotwater
  • 1/4 cup Apple Sauce
  • 250 grams Unsalted vegan butter
  • 2 1/2 cup Brown Sugar
  • 1/2 cup Cocoa Powder Sifted
  • 1 cup Plain Flour Sifted
  • 1 tsp Baking Powder Sifted
  • 1 cup Dark Chocolate Roughly chopped

Instructions

  1. Preheat oven to 170C (338F)

  2. In a heat proof bowl, add grated beetroot and cook in microwave for 10 mins

  3. In a small bowl, mix flax seed and water together
  4. In another small bowl, mix instant coffee and hot water together.
  5. In a mixer, add flax seed mixture, coffee mixture, apple sauce, butter, sugar, cocoa powder and mix till smooth and creamy.

  6. Then add cooked beetroot and mix
  7. Add sifted flour, half a cup at a time in between mixing. Then baking soda, chocolate and mix well.

  8. Pour mixture into lined brownie tray and sprinkle more chocolate on top if desired. 
  9. Bake in oven for 1hr or until mixture comes out clean when prick tested.
  10. When cooked, let brownie fully cool before cutting

Recipe Notes

You can drizzle melted dark chocolate on top for that extra decadent taste.

In a small saucepan boil some water and place a heatproof bowl on top, making sure it sits above the water nicely. Add roughly 70g of dark chocolate in the bowl and stir until chocolate melts.

Then just drizzle melted chocolate diagonally across the brownies.
