Sourdough Pancakes

I just love my breakfast. It's the most important meal of the day, and these sourdough pancakes πŸ™ŒπŸ™ŒπŸ™Œ have got to be my favourite at the moment.

Ingredients

  • 3 cups soy milk
  • 3 tbsp apple cider vinegar
  • 1 cup sourdough starter
  • 2 cups plain flour sifted
  • 2 tsp baking soda
  • 2 tbsp ground flaxseed
  • 1 tsp ground cinnamon
  • 6 tbsp water
  • 1/8 cup grapeseed oil
  • 1/3 cup caster sugar

Instructions

  1. First prepare the buttermilk by mixing the soy milk and the apple cider vinegar together and let it set for 5 min.

  2. In a mixer bowl, add the sourdough starter and butter milk and mix to loosen the starter.

  3. Then add the remainder of ingredients and mix on medium speed till everything has been incorporated.

  4. Then put mixture in the fridge to rest overnight.

  5. Next day, using 1/4 cup scoop mixture and put pancake batter onto hot pan.

  6. When the edge of the batter is starting to look cooked and there are lots of bubbles on top, flip the pancake over and cook the other side.

    As you have cooked one side of the pancake, it won't take long for the other side to be done.

    You will also notice the pancake starting to rise nice and fluffy 😍😍😍

  7. Cooking should only take a couple of minutes each side.

    Remove from heat and serve immediately with choice of topping

Recipe Notes

I choose soy milk as it gives me a thicker, fluffier texture. You can use whatever plant based milk you like. You can even just use water!

This batter will make roughly 10 x 15cm size pancakes.

You can use the batter straight away, but letting it rest overnight will let the sourdough starter work its magic.
