Cold Soba Noodle with Dipping Sauce

This deliciously healthy cold Soba Noodles is packed with flavour, takes less than 10 min to prepare, and best things it's accidentally vegan 😱

Ingredients

  • 2 portion Soba Noodles
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tbsp water
  • 1 tsp sesame oil
  • 1 garlic crushed
  • 2 slice red chilli

Instructions

  1. In a medium size pot, boil some water for your soba noodles

  2. Once water boils, gently place noodles in hot water to cook.

    When cooking noodles in boiling water, the starch in the noodles will create a lot of bubbles and may cause water to overflow if unsupervised.

  3. Once cooked, drain the water and quickly run cold water through the hot noodles.

  4. Drain again and place noodles in bowl till ready to serve.

  5. To make the sauce, in a small heat proof bowl, mix all the remainder of ingredients.

  6. Heat in the microwave for 1 min.

  7. Pour desired qty to taste over prepared soba noodles 👌

Recipe Notes

You can also add toasted nuts, seeds or fried shallots on top for added flavour and texture 😋

 

I added some thinly sliced stir fried shiitake mushrooms, asparagus & carrots for added flavour and veggie goodness 💪.

 

When cooking noodles in boiling water, starch in the noodles will create a lot of bubbles and may cause water to overflow if unsupervised.

 

I found stirring the noodles continuously helps with the bubbling.

 

Cook time is roughly 10 min, I prepare the dipping sauce while I wait for my noodles to cook 😉
